- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup cooked rice
- 1 onion, diced
- 2 cups chicken or vegetable broth
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Sour cream and cheese for topping (optional)
Instructions
- Combine the leftover taco meat, black beans, corn, diced tomatoes, cooked rice, diced onion, and broth in a crock pot.
- Sprinkle in the taco seasoning, along with salt and pepper. Stir well to ensure even distribution.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours.
- Serve hot and top with sour cream and cheese if desired.
Notes
Use low-sodium broth for better control of salt levels. You can easily customize the soup with additional veggies or spices to match your taste preferences.
