Ingredients

  • 1 cup leftover cooked taco meat
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Sour cream and cheese for topping (optional)

Instructions

  1. Combine the leftover taco meat, black beans, corn, diced tomatoes, cooked rice, diced onion, and broth in a crock pot.
  2. Sprinkle in the taco seasoning, along with salt and pepper. Stir well to ensure even distribution.
  3. Cover and cook on low for 4-6 hours, or on high for 2-3 hours.
  4. Serve hot and top with sour cream and cheese if desired.
