Ingredients

- 1 pound chicken breast
- 1–2 egg whites
- 1 cup panko breadcrumbs
- 1/2 cup flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cayenne pepper (optional)
- Cooking spray
- Microwaveable brown rice or cauliflower rice
- Fast-steam veggies (peas, corn, carrots)
- Shredded cheese (optional)
- Low fat Greek yogurt mixed with ranch powder (optional sauce)
Instructions
- Cube the chicken breast into bite-sized pieces.
- In a bowl, mix the chicken with egg whites to coat.
- In a separate bowl, combine panko, flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
- Coat the chicken pieces with the dry mix.
- Preheat the air fryer to 400°F and air fry the chicken for about 10 minutes, shaking halfway through for even crispiness.
- Prepare the quick veggies and microwaveable rice while the chicken cooks.
- Assemble your bowl with chicken, rice, veggies, and optional cheese or sauce.
