- 1 lb ground turkey
- 1 cup diced bell pepper
- 1 cup water chestnuts, diced
- 1/4 cup low-sugar soy sauce
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 tbsp sriracha or chili paste
- 12 leaves butter lettuce or romaine hearts
Instructions
- Brown the ground turkey in a large pan.
- Add diced onion and garlic, sauté until fragrant.
- Stir in chopped bell pepper, water chestnuts, and optional zucchini.
- Pour in the soy sauce mixture and stir until turkey is cooked through and veggies are tender.
- Spoon the turkey mixture into lettuce leaves and serve immediately.
Notes
For variation, substitute ground chicken or tofu. Add shredded carrots or mushrooms if desired. Store turkey mixture and lettuce separately for meal prep.
