No-bake Peanut Butter Oat Cups that are chewy, nutty, and satisfyingly sweet, perfect for snacks or breakfast on-the-go.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup chopped nuts or seeds (optional)
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, chocolate chips, chopped nuts or seeds, vanilla extract, and salt. Stir until evenly moistened.
  2. Line a muffin pan with paper liners or grease it lightly.
  3. Divide the mixture evenly into the muffin cups, pressing down to pack it firmly.
  4. If desired, press a few extra chocolate chips or nuts on top for decoration.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Once set, remove from the fridge, peel back the liners, and enjoy.

Notes

Use creamy peanut butter for a smoother texture. These cups can be stored in the fridge for up to 7 days.
