- 4 cups sweet corn (fresh, frozen, or canned)
- 4 cups vegetable or chicken broth
- 1 medium onion, diced
- 2 medium potatoes, diced
- 1 cup heavy cream or milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- In the slow cooker, combine the sweet corn, diced onion, diced potatoes, vegetable or chicken broth, salt, black pepper, garlic powder, and thyme. Stir well to mix everything together.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the potatoes are tender.
- About 30 minutes before serving, stir in the heavy cream or milk.
- Adjust the seasoning to taste and serve warm.
Notes
For a thicker chowder, mash some of the potatoes in the slow cooker before adding the cream. Feel free to customize by adding diced bell peppers or cooked bacon.
