Ingredients

  • 4 cups sweet corn (fresh, frozen, or canned)
  • 4 cups vegetable or chicken broth
  • 1 medium onion, diced
  • 2 medium potatoes, diced
  • 1 cup heavy cream or milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. In the slow cooker, combine the sweet corn, diced onion, diced potatoes, vegetable or chicken broth, salt, black pepper, garlic powder, and thyme. Stir well to mix everything together.
  2. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the potatoes are tender.
  3. About 30 minutes before serving, stir in the heavy cream or milk.
  4. Adjust the seasoning to taste and serve warm.

Notes

For a thicker chowder, mash some of the potatoes in the slow cooker before adding the cream. Feel free to customize by adding diced bell peppers or cooked bacon.
