- 1 large head cauliflower, cut into bite-sized florets
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup sweet chili sauce
- 2 tbsp low-sodium soy sauce
- Juice of 1 lime
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Toss cauliflower florets with olive oil, salt, and pepper until well coated.
- Spread the florets in a single layer on the baking sheet and roast for 25 to 30 minutes, flipping halfway through.
- While the cauliflower is roasting, combine sweet chili sauce, soy sauce, and lime juice in a small saucepan and simmer for about five minutes.
- After roasting, transfer the cauliflower to a bowl and drizzle warm sauce over the florets, tossing gently.
- Serve immediately, garnished with chopped cilantro or sesame seeds if desired.
Notes
Choose a firm cauliflower for the best texture. A chunkier sweet chili sauce provides a nice body to the glaze.
